    My FISH AND CHIPS have landed. I challenge you to find a better Fish and Chip recipe. Here my how to make fish and chip recipe shows you how to make the ultimate crunchy chips, with crispy batter and flaky fish. The tartare sauce and the mushy peas both are great recipes as well. Please try this recipe, its full proof and something i've perfected over years of cooking. Increase the peace brothers and sistas.

    A couple of points first the really good point he’s using Beef Dripping instead of vegetable oil, Oil boils chips and fish too so that you end up with a pale limp chip and an oily insipid fish, Beef Dripping however fries beautifully like it is supposed to do turning Chips golden brown and crisp and the same with Fish batter, Now for the bad points firstly Maris Piper potatoes are not really that good as chips the proper potato to use Is the King Edward potato chip them as normal pop them into water and strain and dry with a clean tea towel then fry, There is no need to put chips in a fridge over night whatsoever it’s just unnecessary faffing about just get them dry and in the fryer the Dripping will do the rest, The batter why put a floral tasting Ale into batter? Which that particular ale is, Just use a standard regular Ale of your preference, There is no earthly reason to put Vodka or any other spirit in your batter mix none at all the batter will brown and crisp perfectly well without it because of the Dripping, Fish and Chip shops don’t mess about like this nor would they so why mess about at home with a perfectly good meal?.

    Sorry mate when I lived in jolly england I never I mean never had anyone serve me F&C with that sauce you made or mushed peas.I mean I ate so many different vendors of F&C I couldnt count them all. None ever gave me anything cept F&C and vinegar period.

    Beef fat was too low in temp in my opinion.. im sure u had to cook them longer. explains the extra crunch n grease on the chip...i know its a fake crunch but a chip shouldn't snap like that lols

    Best ever Fish & Chips served in paper traditional english way is to be found @ Rani's Fish Shop in Ottawa , Verulam Durban South Africa - her batter is something else & her chips have real crunch on the outside & powder soft inside.

    Glad to see that at the beginning of making the chips he followed Heston's documented method but only fried them once and did not even give passing credit to Heston. (Nearly turned it off at that point.) Actually, while Heston made his method a signature dish, many others, including myself, now 78, when I lived in England and have done the same since living in other countries, had used the same method before him but had never made it public. Of course, British food is well known for how atrocious it is and he only enhances that image by first drinking beer from the bottle then pouring some to make the batter.along with vodka, which I have never seen anywhere else. Tartar sauce is not traditional for F&C but malt vinegar is.
    Frozen peas to make Mushy Peas. What happened to Marrowfat Peas? By the way, Tartare sauce was invented in France but not made the way he did which was another turn off as his use of ingredients was too "heavy" and egg is not traditional. Possibly, the use of Tartare sauce served with fried fish may have started in the USA, but have been unable to trace the location or date when or where it first started.

    Contradictory to what he said, wrapping F&C in newspaper, was banned many years ago due to the dangerous chemicals in the newsprint that were transmitted to the food.

    Crispy battered white fish with hand cut chips. It was the backbone of British suppers years ago. Then it went horribly wrong for a while especially in London (frozen fries with soggy batter and grey fish). To get the decent stuff you had to travel to the North of England. We make ours at home now in our little deep fat fryer. My Mum used to batter the fish in Matzo meal flour in the Jewish style which is also tasty. Thanks for great video.

    Great English fare. Many years ago was in Blackheath outside London and enjoyed haddock done this way at Ed's Fish & chips. A very enjoyable meal and memory.

    Only 6.50 for fish and chips? Damn, here in Portland it costs like 10.50. Well, that's with Halibut, which is a really expensive fish, so I guess 6.50 makes sense for Cod. Actually, funny story, we have a Scottish immigrant in down town Portland who runs a fish and chip cart and he is very anti-beer batter. His reasoning is that if you want a beer with your fish, then just have a beer. As an American of Scottish ancestry, I have eaten there a few times. It's good, but personally I'm not a fan of steak fries. I also do prefer beer batter, in fact I'm drinking a Pelican Beak Breaker IPA as I type this. Cheers ;)

    As an ex-Pat Yorkshireman now living 'dahn sarf' I miss the fish n chips from Whitby. And there was a chippy just up the road from me when I still lived in my hometown of Middlesbrough that sold fish n chips to die for. Cod and chips for us kids, with scraps on, and haddock and chips for Mam, same for Dad. So good to see this bloke frying his chips in beef dripping,it's how they should be fried.     I had Fish and Chips years ago while in Europe. Here in America they just give you plain French Fries or Steak Fries.
    Which has always been my complaint getting Fish and Chips out in a Restaurant, but that's all they give.
    Seeing this Video I now know why the Chips are crunchier than American Steak Fries.

      @londontrada Ok, that might have something to do with it. I wouldn't but them, but if you can find some place with clear water and maybe a sand bottom, it might make a difference. Some let fish set out where the blood stagnated in them. Catch fresh, cut the mud vein out, that dark red area of the meat, it might taste better. I can't say as a fact, but just guessing.
      We used to eat them smoked as well as buffalo. Tiny bones would tear my mouth up. So watch a video on cleaning. I haven't fished in a couple years and before that when I did go, I didn't catch anything, but it's kind of usual someone good to talk with comes along. Lol.
      Makes it worth it as well as getting away and outside.

      @londontrada here buffalo isn't actually the same as carp, but average people view it as carp. Where I think it depends where it's caught. Same with catfish.
      Which as carp has lots of bones, anything difficult to clean is called a trash fish.
