    TRoy, Why did you choose to purchase the 20X36 vs 20X42? What Delta T do you experience between the top and bottom racks? How many briskets do you feel will fit on the 20X36? Also, have you smoked brisket(s) on the 20X36?

    Question, how do you pick your briskets? I heard about the folding test but even doing that, I can never find a brisket that I can touch both ends together. Help please, thanks!

      I've never found one that folds over enough for both ends to touch either. As long as it's pretty flexible and has good marbling, you should be ok. I go with the highest grade I can afford which is usually USDA Prime. If I cannot find a good Prime, then I go with Certified Angus brisket (CAB).

    That mop must be amazing. I've used Dirty Bird, Cow Cover and Kosmos wing dust. It's all good. Time to try the mop. That brisket looked to be over the top! Great collaboration as usual!

    Great video and congrats on the 100k subs. I see allot more in your future. Now Mr. T-Roy, I have a question that's off point for you and your subs.
    Do you have a cornbread dressing recipe? I've looked over channel and I haven't seen one. Just making sure if you do, I haven't missed it. If not, could you recommend one that's on youtube. I have tried A LOT of your recipes and EVERY ON I HAVE, HAS BEEN ON POINT.

    I use Kosmos rubs and they are fantastic. My go to for ribeyes is the Cow Cover followed by the Texas Beef.
