    I cannot make a thin crust, no matter how hard I try. I also have issues with developing gluten in my never works. I'm so jealous of these people for making beautiful crusts.

    Recipe (as far as I could follow, plus my intuition):
    75g starter
    2.5g fresh yeast
    330g water
    25g olive oil
    300g all-purpose flour
    125g central milled flour
    75g freshly milled flour
    15g kosher salt

    Add starter, yeast, water, and oil to stand mixer with dough hook, and mix on low to combine
    Slowly add the flours and salt, and knead until done (I assume 10 minutes?)
    Cover and refrigerate for 24+ hours
    Watch the video for instructions on how to shape and cook. It simply takes practice and confidence to properly transfer to/from the peel.
