  • It all started with a mystery box of fruit which lead me down the path of making a bar of #chocolate from a cocoa pod. So here's all the steps including; fermenting, drying, roasting, winnowing, crushing, grinding, conching, tempering, molding, and finally EATING my pod-to-chocolate bar. 😅 Big thanks to my boys, for always being game. 💕

    Soy lecithin is supposed to help achieve a better mouthfeel in chocolate. Loved the sheen, I could just admire the chocolate for hours lol.

    It's the same with home made peanut butter. A home food processor can't achieve the same ultra smooth velvety texture that you get with commercially made peanut butter.

    I think the reason why it didn't snap is because most American chocolate has some kind of wax or paraffin in it.

    You can literally eat the white slime like things. My aunt owns a cacao farm and she lets me and my cousins to harvest the cocoa pods. We get to eat the white slime-like things and then we'll give her the beans which she will then sell off to those who make chocolate.

    This is the hardest way to temper chocolate. A lot of people just throw some seed chocolate in there. But I don't think you can do that with making it from scratch 😂

    I made chocolate like this in El Salvador we let the beans sit in layers of sugar and cinnamon for a couple hours before grinding and just added water when grinding. We added it to coffee and it was so good🙌🏻🙌🏻

    Here in the philippines, when i was younger, our grandma would let us chew on the white flesh and spit out the beans, which will then be processed manually. Its really good actually. Made up my childhood hahaha
