So what i learnt from using brioche for french toast is you need to cook it way longer because it needs to firm up more than other toasts. Otherwise it was tearing too easily when transferring to a plate. I did find it fluffier and more delicious so i wouldn't go back to regular white toast because the butter doughs like croissant or brioche are just more delicious. Try it with Vegemite or maple syrup basted oven baked bacon.
