Vegan Thanksgiving Recipes in One Hour

  • A week before Thanksgiving, I like to test the vegan recipes I plan to make ahead of time just to make sure everything tastes delicious. Plus - I get to enjoy the dishes TWICE! ;)
    I wanted to make everything as quick and easy as possible. I came up with three recipes that can all be made in under one hour - yes 1 hour or less!
    All the dishes are gluten free, nut free, refined sugar free, and best of all: cruelty free :)

    Vegan Mashed Potatoes:

    *I subbed dry chives for fresh chives

    Grain Free Cauliflower Stuffing:

    *I used vegan earth balance butter and vegan "not chickn" broth. I also used 2 tsp dry rosemary and 1 tsp dry sage instead of fresh.

    Pomegranate Vinaigrette:
    1/4 cup extra virgin olive oil
    1/4 cup pomegranate vinegar
    2 tsp maple syrup
    1 tsp dijon mustard
    pinch salt & pepper
    For the salad:
    6 cups baby spinach
    1/2 cup cooked brown rice (slightly warm)
    1/2 apple, chopped
    1/4 cup dry cranberries
    1/4 cup pumpkin seeds (or any other nut/seed you like!)
