    I make a mornay sauce with Parmesan Swiss. I add seafood. Then, I add mozzarella toward the end and mix it in together before baking it.

    I'm confused - amateur and home cook aren't "professional" so what's the difference? I'm a very very very good cook but I don't work as a chef - am I amateur or home cook? I am an amateur as I'm not professional and I cook at home. This is so confusing.

      Probably because they recognize that complex flavours usually taste better? There's nothing wrong with just keeping it basic, but basic things like adding texture and contrasting flavors really make a difference. It's like adding some salt to the top of a chocolate chip cookie - it really enhances and brings out the sweet flavor of the chocolate and the cookie.

    Graham crackers on mac and cheese? Philadelphia cream cheese?
    No thanks.
    I like to blend some shredded cheese into the panko in a food processor, makes the best texture.
    I figured that out when I worked for Hotel Hershey
    I do support a little mustard powder in the sauce. I make a bechamel with cheddar instead of gruyere, touch of old bay and mustard
    Serve with the crust and some Tabasco, ooh nelly
