    Vegan Yogurt Biscuits and Gravy
    (Makes 6)
    1/2 cup soy milk
    1 tablespoon apple cider vinegar
    2 cups flour
    1 tablespoons baking powder
    1 teaspoon salt
    1/2 cup thick vegan yogurt
    2 tablespoons vegan butter, for brushing
    Sausage Gravy
    3 vegan sausages
    2-3 tablespoons flour
    1 1/2 cups soy milk
    1/4 teaspoon garlic powder
    1/4 teaspoon salt, more to taste
    black pepper
    scallions for garnish

    Hey everyone! I know "healthy" Southern food don't always go hand in hand, but I've been craving Biscuits and Gravy as of late and really like this recipe! I didn't want chunks of fat in the biscuits. I didn't want a fat-based roux. I just wanted to eat something that was still a treat, without having all the junk in it (nothing against the original, as it was tasty as heck). So I really hope you all enjoy! 😊

      So there is more and more research out that oils/fats - any kind (be it olive oil, avocado oil, butter, margarine, etc.) attributes to inflammation (cause leading to big diseases) and screws up your arteries ability to dilate. This recipe was an aim to maybe eliminate some of that - It's not as crumbly or rich as normal biscuits, but it's a nice alternative. I put the coconut oil version in the description box.

      So glad you liked it! - I'm getting to the point where sometimes even if I eat something let's say on a cheat day, I feel guilty about it, so this recipe is good for that :)

    something that might taste really good if you can't get your hands on vegan sausage or can't eat gluten would be mushrooms! they would taste really awesome in the gravy, I feel. plus it adds a little extra nutritional value lol

    Could I substitute the vegan sausage with a smoked tofu scrambled? Been trying to decide what to use the smoked tofu on, could that possibly work? :-P

      It's probably going to be bland, so just season it well :) -- In general, you can sub anything for anything. It's just whether you're ok with the taste/texture. Some people who have gotten used to vegan alternatives are perfectly fine whereas some people will tell me different😊

    Oh dang!!! I'm gonna make this tomorrow, MINUS the green onions, you know when you go to those greasy breakfast joints, they don't add green to ANYTHING! Thx for this!

      The green onions are the best!!! They really add to the dish - I promise it wasn't just for looks. That little bit of fresh onion-ness adds to the gravy, which is just ever so lightly seasoned, which I like😊

      It's probably one of the most popular. Traditionally, it was leftover drippings - animal fat - that was needed to make the roux for the gravy and it needed to be cheap. Usually this included cooking sausages and using the bits and drippings.

      @East Meets Kitchen Thank you for always doing amazing Chinese dishes with occasional non-Chinese dishes like this one above! I am wondering if you think that recipes like "vegan dry salty pork-belly (or your pork-chop) stirfry with fermented black beans" or "vegan Cincinatti style chili" might sound interesting? I would love to try those myself :)

    I love biscuits and gravy. Just put extra gravy on my hash browns this morning for breakfast. I like to make my own cashew milk for savory recipes. I find all store bought plant milk to have some degree of sweetness, even the unsweetened, and that doesn’t work for my tastebuds :) The cashews also help thicken the gravy.

      East Meets Kitchen yeah it is weird. I just don’t taste the sweetness from homemade raw cashew milk like I do with any store bought unsweetened soy/nut milks. Probably just personal taste. I’ve tried making homemade soy milk but I don’t care to do the nut bag thing. I’ll spend all day making dumplings but cleaning but bags isn’t my thing :)

      @East Meets Kitchen As a guest I go along to not offend the hosts. This limits what I do, there's a lot of customs I'd prefer not to partake in. April fools day is coming, that's my "day off" fast food burger and shake.
      I find it difficult everywhere especially language. I would never be able to say I love feedback. Love to me is an exclusive title for a connection I have with only one other person.
      It's like cringe to me when people say how they love objects and things. Like shoes are on the same level as a husband/wife.
      This is probably why I don't go out much, oh well.

      @Hubtub No I don't cook animal, but I try bits of stuff when I'm traveling. I think it helps with flavor profiles and mimicking textures and flavors. I don't love when people give me feedback about that because it limits what I do. But yes, I COOK vegan recipes for you guys.
