@Rasha Nour It's a type of kimchi made with small or medium-sized radishes, called chonggak-mu! The "chonggak" means "unmarried man", and unmarried men in the older times used to wear their hair in a long braid. Hence the translation, "ponytail".

As my wife has been out of state for a while now, I made Kimchi for the first time a few months ago. Normally my wife makes it, she loves Korean food. I am going to try it making it with American green cabbage (wife does not think it will be as good) and 4 heads of Bok choy to limit moisture and I am going to add leaks for the first time also. I am thinking about adding peppers to heat it up a bit as 3 cups of the red pepper is not enough heat for me... not sure I am going to do this as my son does not like really hot foods.

i love sour kimchi mixed with some tahini. You know a fat protects the good bacteria from being destroyed by the stomach acid. So tahini is perfect since it's ground sesame seeds.

Yes, you can.
Mangchi when you washed the cabbage u also washed all that salt, and didn't add more later why? Won't it get bad without salt.
The cabbage still contains salt because it has been salted all the way through. The rinsing only removes the excess salt on the surface. In addition, the fish sauce (and other optional fish/seafood ingredients, such as salted baby shrimp) also contains salt.

Sweet rice is also.known as glutinous rice. Search for glutinous rice flour. Otherwise, use regular rice flour or wheat flour.

Hello maangchi! I tried out your kimchi recipee and it turns out great! I use 1 cup of red Chili powder but still it's too spicy for me😂 and i use oyster sauce instead of fish sauce, but it doesn't change the flavor that much. I hope you make another video about Korean traditional food again!

Hi Maangchi, I’m a new subscriber. Thank you for sharing this amazing recipe. I made 3pounds 3 days ago. The small batch fermented after 1 day at room temperature, but the rest (in fridge) hasn’t change at all. I know that it’ll take longer for it to ferment in the fridge, but I really really want to eat it (finished the small batch within 30m 🤪). So is it ok to take some from the fridge and leave it out?

You can use regular rice flour or wheat flour. If you don't have rice flour, you can soak 1/2 cup of rice to make porridge and blend it together with the onion, ginger and garlic.
