    Plz, go to Chinatown, in your town and have some duck. You can have Peking Duck, duck on rice, roasted duck, duck noodle soup, etc... It's worth it. Usually around a university you'll find some amazing Chinese, Vietnamese and Asian restaurants. 🧡 💛 💚 💙 💜 🖤

    Close to 50 years ago, an old Chinese nutrition professor, told my wife (she was his student) and myself that duck was butchered so as to not have any cut marks other than the opening to remove the intestines. That opening was closed and the duck was allowed to rest a couple days out of the cooler so that bacteria would form gas, which separated the skin from the body. The duck was butchered by cutting a very small hole on the duck's foot, which caused the duck to bleed to death...Believe it or not.

    I own a BBQ business in Michigan and use Maple wood to smoke with. I was down in GA. picking up another Lang Smoker Cooker and got some Pecan wood and brought it home with me. Man that is some fine wood to use as well. P.S. I use a South Carolina Style seasoning of Apple Cider Vinegar, crushed red pepper, and Brown Sugar....TANGY!! You are right about the hard work, it's all of that, but it's worth it Let's have us a PIGPICKIN"!

    For information about history of Peking duck, it originally created in Nanking. In Ming dynasty, there were two capital city Beijing and Nanjing, and bei means north whereas nan means south. Jing means capital city. Nanjing people had long history of eating ducks because that region is where most rich families used be living. During the third emperor time of Ming dynasty, because of the war of succession, the main administration moved from Nanjing to Beijing and so this duck dishes. The way of making Peking duck however became more professional and superior than its original place. The standard to judge if it s good Peking duck is that the duck skin should never get soft, doesn’t matter how long you are going to wait it for.

He knows a lot about the dish that he prepares, where it comes from, the history behind it. He's passionate about it, and about sharing it with an audience and that's why I love Eater videos.     Point out a mistake in the videos. Peking Duck comes from Beijing, which in the old days called Peking. However, this dish initially comes from Nanjing, which is the south part of China. Nanjing used to be the capital of china 600 years ago, the emperor at that time decide to move the money to Beijing. The emperor at that time loves this type of duck dish, So when he moved to the capital, he brought a group of ducks. Also he bring this dish to Beijing, from then on, it is called piking duck.

    There are no cell walls in animal cells. The purpose of salt would primarily be for preservation as no bacteria can survive at high salt content.
